Tags and notes
The note is what you did. The tag is what kind of thing it was. Both are optional, and both survive an import from another tracker.
Tags
Add one or more tags to any entry. They are handy for slicing a week in a way projects cannot, for example all the revision rounds across three clients, or every site visit.
If your industry has a few obvious tags, the tag field suggests them as you type. They are suggestions only. Nothing is forced on you and you can type anything.
Notes
Notes autocomplete from what you have written for that project before, so repeated work takes a couple of letters instead of a sentence. Same client, same task, same words.
You can insist on a note for entries you type by hand, from Settings. Timed entries are left alone.
Tags earn their keep at invoicing time
When you build an invoice, tags are one more way to pick what goes on it. A retainer that includes support but not new work is a tag filter, not a mental exercise.
Coming from another tracker
Toggl and Clockify tag columns import into owntime tags rather than into clients, which is usually what people mean. If your old file named the person who did the work, that is kept too, as a tag, so a migration does not lose who did what.
